I need a disagreemnt settled: is it halacha to hold a kiddush cup in the palm of your hand or is it just custom?  does this apply to the the kiddush cups that have a stem, as opposed to the ones that come with a dish underneath?

The dish underneath is simply there to catch overflow. It is never, to my knowledge, raised with the kiddush cup regardless of the type. As for how a kiddush cup is held, there are many customs and even more aesthetic choices. I am not aware o anything that rises to the level of Halacha.

we had someone tell us that any other way was "wrong." when I pushed him on it, he told me "well, it's strongly preferable."

Some communities are full of people who like to "correct" other people - usually when they are small and made up of Baali thsuva who allow their enthusiasm to overcome their critical faculties.

"Yeah", because holding a cup with a long stem by the base makes SO much sense! Not! Some people have the Minhag of using a stemless cup, because it should be held from the bottom, but that "should be" is definitely nothing more than Minhag.
